Tri-Color Pasta w/ mozzarella


Time is flying and my kids are in school. I do remember the day when my elder one was going to school for the very first day. It was hard but somewhere there was peace in my mind that he will learn alot. BUT when my little one started, I never realized that I would be that much sad because he is always around me, either i am cooking, or cleaning or reading. Since the day he was born, he’s been like my shadow. If I may confess, I never wanted to send them to school, just because i didn’t want him to go away from me. At very first day of his school, he woke up at 6:10 am and was very excited to go (check out the his disney friends in the red basket) and we drove to school and dropped him in class.

Going to school

I could have never imagined that it would be that much hard to leave him alone. Trying not to show my tears to others, I was helpless, controlling myself from going again to his classroom and holding him. He was running through the door and was trying to find me, while I stood at the door, blaming myself that why I am sending him to school. But education is important.

It’s now more than a month, he is learning alot, no crying, enjoying everyday tasks at school. They do cooking, painting, playing and much much more. When we go to school, he tries to make the sad face, but we know he is fooling us – he is ‘HAPPY’.

This was the first dish I kept for the first day lunchbox.

  • 1 Cup Tri Color Pasta ( use any of your choice i.e Penne / Elbo / Rotini / Farfalle / Cannelloni / Rigatoni )
  • Olive Oil
  • 2 Cloves Garlic (finally chopped)
  • 4-5 Floret Broccoli
  • 1/4 Cup Kettle Corns
  • 1/4 Cup Green Peas
  • 1/2 Cup Tomato Sauce
  • 1 tbsp butter
  • 1/4 cup shredded mozzarella
  • 1 tbsp shredded parmesan cheese (optional)
  • Salt
  • Pepper
  • Fresh Or Dried Oregano

In a pot, bring 2 1/2 cup of water to boil and put a pinch of salt and few drops of  olive oil.  Once water is boiling, add the pasta and let it cook just before its perfectly done. Drain it and wash it with cold water.

In a pan, add butter & chopped garlic, let it cook for a few seconds and add tomato sauce. Cook for another minute and add the broccoli florets, peas & corns. Let is cook for another 2 minutes, and now its time to add pasta. Put some salt, pepper and oregano. Mix well and now add the cheese and let it cook until cheese melts.

Remove the pan from the heat and add the shredded parmesan and its ready to eat. :-)
