Cholle (Chana Masala) – Chickpea Masala

Cooking Time: 15-20 mins

Serving Size: upto 4 people

Ingredients:

  • Onion – 1 large
  • Garlic – 2-3 cloves
  • Ginger – 1 inch pcs.
  • Green Chilly – 4-5 pcs.
  • Tomato – 1 small
  • Cumin – 1 tsp.
  • Bay leaves – 2-3 leaves
  • Cardamom – 1 pcs.
  • Turmeric – 1 tsp.
  • Coriander powder – 2 tsp.
  • Garam masala – 1 tsp.
  • Red Chilly Powder – ½ tsp.
  • Salt – as per taste
  • Cilantro – finely chopped
  • Chickpeas – 2 cups (soaked overnight) and boiled
  • Oil – 1 tbsp.
  • Ghee (Clarified butter) – 2 tsp.
  • Paprika Powder – ½ tsp.

 

Cooking Method:

Heat the oil in a pan and add cumin, bay leaves, cardamom & paprika powder and roast in the oil for a few minutes. Mix onion, garlic, ginger and 1 green chilly in the blender to make a paste. Add this paste to the pan. Add turmeric, coriander powder and garam masala into the same pan and saute until the oil separates from the mixture. Add chickpeas and a cup of water & salt and let it simmer on medium heat, for a couple of minutes. Once this comes to a boil, turn the heat low and let it simmer for 5-7 minutes.

Heat the clarified butter in a separate pan and add chopped tomato and the remaining green chillies (split in the middle). Let the mixture cook for 2-3 minutes and add it to the pan with the chickpeas and mix. Finally, sprinkle and mix the chopped cilantro into the pan and turn of the heat.

Enjoy with naan bread and some raw onion slices.
